Today we are off to Austin, Texas to spend some time on lake LBJ with family then pick up the boys at camp Saturday {woot}! We’ve missed them so so much. I am such a procrastinator when it comes to packing…have no idea why, but I always prep for flying with a toddler in tow. There’s nothing worse than being unprepared on a flight with a rebellious two year old. I’ve learned a best practice is to keep their little fingers busy {hence the crayons and stickers below} and to keep lots of suckers and snacks readily available for bribery when warranted.
Last night I made taco soup, but switched it up and used ground turkey instead of ground beef. Also I used cream-style corn rather than regular and really liked that too!
Here’s the recipe in case you are one of the rare people that hasn’t made taco soup:
1 lb. ground turkey
1 medium chopped onion
1 packet ranch dressing mix
1 packet of taco seasoning mix
2 cans of pinto beans undrained
2 cans of diced tomatoes undrained (i prefer to use rotel)
1 can of black beans undrained
1 can white cream-style corn
sour cream
shredded cheese
tortilla chips (optional)

I like to saute the onion for about 1 minute in olive oil then throw the ground turkey in. It makes the turkey have a little more flavor. Drain the meat then throw everything into a pot to simmer for 20 minutes!
